🥗 Ingredients

- 3 lbs (1.4 kg) beef stew cubes - 2 tbsp all-purpose flour - 4 tbsp olive oil - 2 sweet onions, sliced - 6 whole garlic cloves - 1.5 tsp salt - 1/2 tsp black pepper - 1 tsp sweet paprika - 1 tsp garlic powder - 1 tbsp ras el hanout - 2 cups precooked chickpeas - 2 tbsp tomato paste - 2 tbsp date syrup (silan) - Water to cover - Chopped parsley, to garnish

👨‍🍳 Instructions

1. Dust beef cubes with flour and toss to coat. 2. Heat olive oil in a wide skillet over medium heat. Add sliced onions and garlic cloves, stir for 1 minute. 3. Add the beef and sear for about 2 minutes until golden brown. 4. Season with salt, pepper, paprika, garlic powder, and ras el hanout. Stir to coat. 5. Add chickpeas, tomato paste, and date syrup. Mix well. 6. Pour water to cover everything. 7. Cover with a lid and cook on the stovetop over medium heat for 30 minutes. 8. Transfer to oven at 175C (350F) for 2.5-3 hours. Check every hour — add water if needed to keep meat covered. 9. Garnish with chopped parsley and serve.
