🥗 Ingredients
- 1 pound (450g) green beans, trimmed
- 1 tbsp olive oil
- 1/2 pound (225g) brown mushrooms (cremini/Baby Bella), sliced 1/2" thick
- 1/2 cup diced yellow onion
- 1 tbsp minced garlic
- 1/4 cup water
- 1 tsp soy sauce
- 1 tsp kosher salt, divided
- 1/4 tsp black pepper
- 1 tbsp unsalted butter
👨🍳 Instructions
1. Wash and trim green beans. Cut in half if very long.
2. Heat olive oil in a large skillet over medium heat. Add mushrooms and 1/2 tsp salt. Saute until tender and lightly browned, 2-3 minutes.
3. Add garlic, cook 30 seconds until fragrant. Add onions, saute until translucent, 1-2 minutes.
4. Add green beans, water, soy sauce, remaining 1/2 tsp salt, and pepper. Stir to combine.
5. Increase to medium-high heat. Cover and cook until beans are tender and bright green, 3-4 minutes. If still crisp, add another 1/4 cup water and steam more.
6. Remove lid and stir until water evaporates, about 1 minute.
7. Turn off heat, add butter and stir until melted.
8. Taste, adjust seasoning, and serve hot.
